(Dagbladet): In eighteen years Gunhild Stordalen lived diagnosed with systemic scleroderma, one connective tissue disease that attacks many organs and provides pronounced connective tissue formation.
During that time she has been undergoing harsh treatments. Chemotherapy and months of experimental treatment in the Netherlands is just some of what she has been through.
In an interview with Good Morning Norway says Gunhild Stordalen that treatment has not worked so well as she thought.
– I was almost fresh, and it took almost for granted that I was going to be completely healthy. But then I got a serious relapse in the fall. It looks like the effect that I had chemotherapy and stem cell treatment was short-lived, and that the disease is back, says Stordalen.
– Got serious relapse
She has been praised for transparency in chemotherapy and when she stood on Skavlan recording without hair at this time last year, so it appears that Stordalen went victorious from the fight against the serious disease.
Her husband Petter Stordalen told in the book “I’ll tell you my secret,” the couple’s shared secret struggle Gunhilds health.
“All of Norway believe that Gunhild’s fresh. That no one knows is that she has become worse, “is one of the quotes from the book. Although she does not want to focus on disease.
Getting retrial
She stated that she now gets new treatments, and little is known about its prospects.
– It is very difficult to say. The answer is that I do not know. There is no one else knows it either. It is a rare disease and there is no known effective treatment. Nobody has guarantees for how long one lives, and the uncertainty must only relate to, she tells Good Morning Norway.
When Dagbladet met her during meal Joy conference in Stavanger on Tuesday, said she that it has been good to have something greater than yourself to think at this time.
– EAT is it that makes me persevere. When one gets sick one needs something more important than themselves to think about, she says and adds:
– I often think in the big picture, my life as an ant in an anthill. But these issues here is something that really could help change the world for the better, for many.
Fully focus on food
Gunhild Stordalen that she was concerned about food when she went to the Board of male hotel chain Nordic Choice, and gradually realized how food connects challenges around health, environment and animal welfare.
– in the hotel industry constitutes food and drink a large ecological footprint, and the question of what we should servers at over 180 hotels led us straight into a global knowledge gaps. We found that here there was no good answers for how we could be more sustainable, she said.
She started therefore EAT, an organization which, according to her will “promote new knowledge and mobilize politicians and businesses for healthier and more sustainable food production. ” Former President Bill Clinton, Labor leader Jonas Gahr Støre, Prince Charles and Crown Princess Mette-Marit are among those who have supported and contributed during previous conferences.
